To achieve optimum flavor and sugar-to-acid balance, the grapes are gently crushed immediately after harvesting. The juice and skins was fermented with a selected yeast strain in temperature-controlled stainless steel tanks until dry. After primary fermentation, the wine was pressed to retain fruit-focused expression and aged with French and American oak, adding a nice sweet oak spiciness. Aromas of juicy plums marry with notes of herb and rich cedar in our elegant Woodbridge Cabernet Sauvignon. Deep flavors of blackberry and tobacco give this wine excellent balance, with oak aging adding a toasty, caramelized quality.
