The ancient cave, hidden in the heart of the picturesque Carmel mountain, was quarried into the mountain about 250 years ago. The natural conditions within the cave turned it into an ideal wine cellar, that was already used, as history reveals, in the 19th century to store brandy and wine.
As the cloud it's named for, fluffy and billowy, this blend has both a soft texture coupled with a distinct minty flavor and a hint of light spice. The grapes are grown in the Galilee, harvested manually and aged for 14 months in oak barrels.
This Cabernet Sauvignon from Binyamina exhibits a bold and rich structure with inviting red fruit aromas. Full-bodied, slightly herbal, fruity, blackberries on the palate. The Cave "Old Vines" represents the Cave winery's masterpiece. This fine wine was made from quality Cabernet Sauvignon grapes grown on mature vines that were planted in the early 1980's in Kerem Ben Zimra in the upper Galilee region of Israel. The combination processes followed by 24 months of aging in French oak barrels inside the cave, created a complex wine that will gracefully age for over a decade.
