American single malt whiskeys, however, are less regulated, allowing more room for experimentation. With a specialty mash bill of Washington Select Pale Malt, Munich Malt, Extra Special Malt, pale chocolate malt, brown malt, and peated malt, their specialty Garryana-aged single malt is fermented with Belgian Brewer’s Yeast for a total of 144 hours, and aged partially in a distinct oak.
The Opus One 2021 effuses seductive, dark-fruit aromas of crushed cassis, blackberry, and black cherry with subtle hints of violet, vanilla, and baking spices. The harvest for the Langhe Nebbiolo DOC Schiavenza is carried out manually between the second half of September and the first of October. The winemaking and aging process includes fermentation and maceration in 30/50 quintal concrete tanks for 15-20 days, maintaining a variable temperature between 30° and 33°C.
This rich, old tawny port owes its intense and complex nose to many years of aging in oak casks. With an intense amber-tawny color, the wine has opulent, voluptuous, spicy, jammy, and nutty aromas with orange blossom notes and a fine oak influence coming from the long aging in cask.
