Mukuzani - this is actually what the wine from which we should begin associating with Georgian wines. Its perplexing bundle and delicate amicable taste won't leave anybody apathetic.
Made from a selection of 100% Tinto Fino vines (local name for the Tempranillo grape) from some of the oldest vines, age ranging from 25 – 75 years. Maceration during 28 days with the skins.
As soon as you pour out a generous flute of this bubbly you’ll notice the fine bubbles and vibrant aromas of ripe berries, lemon zest and ripe apples. The first sip showcases a rich mousse and uplifting lemon and white peach flavours punctuated with hints of pastries and toast.
The grapes are harvested in the coolest hours of the day and the wine is left to ferment in conical wooden vats at a controlled temperature. At the end of the process, it is refined for 15 months, first in new 600-litre demi-muids and then in barriques.
The frozen Vidal grapes were harvested in late December 2019 when temperatures fell between -10ºC and -13ºC. After settling the juice in stainless steel tanks, cool fermentation was completed in late-February when the wine was placed outdoors to stop fermentation and to complete natural cold stabilization.
Bright straw yellow with fine bubbles. The bouquet is fragrant and intensely fruity. It shows clean notes of apples, pears, and citrus, accompanied by slight hints of hawthorn, wisteria, and elder. Crisp, clean, and delicate with fine bubbles caressing the palate.
