The Yuzu citrus fruit has been growing in Japan for more than 1.000 years. Because of its dry pulp and many large seeds the juice can only be extracted in a complicated – i.e., expensive – process from pulp and rind. Fortunately, just a few drops are already enough for a unique and intense flavor.
Excellent Sake rice (Yamadanishiki), a high polishing rate (50%) and a long fermentation at low temperatures turn Île Four Limited Edition into a super premium Sake comparable to single cask bottling of high-end Whiskies or rare wines.
We polished our home-grown Yamada Nishiki to 51%. The ratio of lees,which is usually about 40%, is intentionally increased to 70%. This is avery luxurious Japanese sake. Low alcohol and elegant sweetness, Fruityscent and taste like mango.

Using only the finest rice, and Nada's famed natural spring water "Miyamizu", Junmai Ginjo has been brewed with meticulous care and traditional method. This flowery fragrant Sake with silky, well-balanced smoothness can be enjoyed chilled or at room temperature. Matches dishes with a slightly salty taste or a slightly soy-sauce taste.
Herbaceous with hints of grapefruit and a light earthiness. Good acidity, mineral driven, well-balanced with a clean, medium finish. Delicious with tempura, full flavored fish and shellfish, fresh green vegetable dishes, and coconut-based Asian dishes.
It's totally natural, using OCIA certified rice harvested from the Sacramento Valley with absolutely no preservatives, no alcohol, and no sulfites added. It is brewed under the direction of Takara's master brewer combining the most traditional methods with modern technology to arrive at the Ginjo grade.
Nigori is the way sake first appeared when it was brewed for the Imperial Court in Kyoto as well as for most of its 2,000-year history. It is lightly-filtered and the sweetest of all our types of sake. It is especially delicious with very spicy foods.

Dassai is a well-established sake brewery in Yamaguchi, Japan. Dassai Blue is an expansion of the brand into the U.S. where earlier this year they opened a large, ambitious new brewery in Hyde Park, New York.
