This wine is huge, expansive and profound. There are wood-smoke and tobacco fragrances alongside blackberry and dark cherry flavors. The body is full and thick however there are delicate tannins in the surface.
Until the 1980s the wines of Languedoc-Roussillon were mostly rustic, roasted, and dirt-cheap--of little interest to export markets. Smells like strawberries, raspberries and white flowers.
This wine, though possessing the characteristic suaveness of the site, does possess a trace more density than years past–likely due to the additional thinning passes we made. It was also an exceptional year for Mataro in a generally very strong year at the site, and the variety makes up over 30% of the blend.
Grapes taken from the best parcels, carefully selected; manual harvest in 15 kg boxes, with cooling of grapes and extraction of the must with a very soft whole grape pressing; fermentation in stainless steel vats and French oak barrels, followed by a rest period of 8 months.
Pale yellow color with green hues. The aroma is fresh and vibrant with a base of rich tropical fruit but dominated especially when young, by fresh lime and lemongrass aromas as well as a fresh herb note.

The Salem Wine Company was started by star-sommelier, Rajat Paar, and his partner and esteemed winemaker, Sashi Moorman. Fruit comes from the biodynamically-farmed Seven Springs Vineyard in the Eola-Amity Hills subregion of Willamette Valley, OR and is fermented with native yeasts (nothing added), fermented in large, neutral oak and is naturally clarified without filtration.
The grapes used to produce our 2016 Lake County Dalliance Chardonnay came from the hills and slopes of ultra-premium vineyards of Lake County, California. To help retain the lush fruit, this wine was Stainless Steel fermented at cool temperatures, and aged completely in stainless tanks to preserve the crisp, clean aromas and flavors of an oak-free wine.
The Lindstrom Cabernet Sauvignon, grown on one of the warmer sites in Stags Leap District, shows off the cooler season to its full advantage, while still retaining the ripe cherry and cocoa powder characteristics so indicative of this growing area.
A light wine of medium acidity with a lingering, pleasant final taste of citrus fruits, is suits perfectly chicken on the stove or not very fatty fish, seafood of summer salads.
