Grapes taken from the best parcels, carefully selected; manual harvest in 15 kg boxes, with cooling of grapes and extraction of the must with a very soft whole grape pressing; fermentation in stainless steel vats and French oak barrels, followed by a rest period of 8 months.
At the end of the 8 months rest, during the blend preparation, only a small part of the wine is used, after a second selection of the best barrels or vats which will then compose the final blend.
