Vatting lasts 3 weeks on average, pumping over twice a day, and we always try to wet the whole surface of the cap. Ageing is in tank to preserve the fruit character, without the addition of oak. The Crozes Hermitage red 2009 is ruby red with a nose of forest berries; the tannins are supple and elegant. It is ideal with white meats.
In 1970, Nicole and Bernard Chave bought just 12 acres of vines and a lot of orchards, initially selling their grapes to a negociant. They joined the Tain l'Hermitage coop in 1974, but after four years decided to go it alone. In the early 1980s, they built their own cellar and after finishing his studies, Yann joined his parents. He refocused the company to producing quality, rather than bulk, wines. And in 2003, Yann built a new winery and obtained organic certification. Today, Domaine Yann Chave consists of 49 acres of organic vineyards and about 60% of their wines are sold globally.
