Simmonet Febvre's Petit Chablis was born in vineyards located in the heart of the prestigious French region of Chablis, in Burgundy. It is produced with 100% Chardonnay grapes, carefully picked and selected by hand. Fermentation takes place in stainless steel tanks at a controlled temperature of 16-19 ° C. After sorting in the vineyard and winery, the grapes are de-stemmed then directly put in tank. The spontaneous fermentation then starts. The grapes will stay in tank for roughly three weeks during fermentation. The wine is then put in oak barrels, by gravity, for 10 months (no new oak). No fining is performed.
