The roots of Pajaru estate are deeply embedded in the history and symbols of Puglia. The shepherd, known as the “Picuraru” in dialect, embodies that seasonal toil typical of the slow work required to produce a great wine. It is from the tenacity and perseverance that the shepherds have in tackling their work that we were inspired by the creation of the Primitivo “PICURARU”.
A very fresh and decidedly peppery nose features pretty notes of red berries and an elegant floral nuance. There is fine intensity and volume to the well-detailed middle weight flavors that deliver very good length on the saline-inflected finish. Good stuff that could be enjoyed young or aged for a few years to good effect.
Made from 90% Mencía, with Palomino, Doña Blanca, and Alicante Bouschet, these vines are located in several plots with an average age of at least 50 years. The ancient cave, hidden in the heart of the picturesque Carmel mountain, was quarried into the mountain about 250 years ago. The natural conditions within the cave turned it into an ideal wine cellar, that was already used, as history reveals, in the 19th century to store brandy and wine.
This wine gives aromas of ripe red fruit, blackberry pie, dried cranberries with hints of brown sugar and warm baking spices. Powdery tannins lend structure to this wine, while maintaining elegance and ending in a long lingering finish.
Intrigu is only aged in stainless steel for 6 months, followed by 3 months in bottle, which allows for a transparent presentation of the grape. On the nose there are aromas of balsamic, clove, violets, and black pepper. On the palate, the wine is filled with notes of darker black and red fruits, tobacco leaves and a touch of clove. The tannins are gentle and leave a mouth coating finish.
This bourbon barrel aged Zinfandel is vibrant and spicy, with flavors of licorice and cracked black pepper that are perfectly complemented by notes of vanilla and blackberry. [WE 2021 U.S. Winery of the Year]
