After hand-selecting a number of whiskies defined by hints of smoldering charcoal, crisp ash and burnt timber, we barreled our blend to mature in deep-charred old oak casks.
Batch 03 Released in 2024. It’s been 100 years or so since the Jack Daniel Distillery released a whiskey of 10 years of age or greater. Evolving Jack Daniel’s past aged-stated whiskey process, these Tennessee Whiskey barrels have been aging in the Buzzard’s Roost of our barrelhouse, and methodically relocated to the lower floors of different barrel houses to extend the aging process for the last 10 summers.
The EABA is more Syrah-dominated and checks in as 65% Syrah, 22% Mourvèdre, 10% Grenache, and the rest Viognier that saw plenty of stems and close to two years in 50% new French oak.
After the fermentation the pomace and the last fraction of the pressing wine is double steam distilled in traditional way. The resulting Chacha Chardonnay is stored in stainless steel tanks before bottling. Intense floral aromas.
Made with 60% Pinot Noir, 30% Gamay, 10% Cabernet Franc. This delicious small-production bottling was produced from vines gron on pink slate in southern Loire Valley. It was harvested by hand during several passes through the vines. Fruity, spicy, and vegetal aromas.

The Yuzu citrus fruit has been growing in Japan for more than 1.000 years. Because of its dry pulp and many large seeds the juice can only be extracted in a complicated – i.e., expensive – process from pulp and rind. Fortunately, just a few drops are already enough for a unique and intense flavor.

The 2021 Ménage à Trois White is a trip to the islands without the worry of sunburn or bugs. It’s undeniably fruity and unabashedly easy. It’s meant to be quaffed, not analyzed. The White blend brings together citrus and tropical fruit flavors with crisp acidity.
The nose is fruity, fresh, relatively fine and offers a fine concentration. It reveals notes of blackberry cream, plum and a hint of cassis jam associated with fine touches of chocolate, cardamom, a discreet hint of tea and a very fine / discreet hint of balsamic.
The grapes used to produce this wine originate from California's famous Clarksburg apellation. It displays all the wonderful elements characteristic of this varietal. Exhibits fruity notes of gooseberry, white peach, and nectarine.
