Tasting Notes:
Nose: Tropical with Banana, floral, lychee, red apple, soft and warm feeling.
Opaque ruby. Ripe dark berries, cherry pit and licorice on the spice-accented nose. Lush and appealingly sweet, offering juicy blackberry and cherry flavors that take on a smoky nuance with air. Closes spicy and long, with a hint of licorice and round, even tannins.
From Paso Robles the heart of California’s Central Coast, Paso Robles which see a longer growing season than Napa characterized by hot, sunny days and cool, clear nights. We sourced the fruit from two vineyards at either end of the AVA with strikingly different growing conditions.
This Quinta Ruban succeeds the 12 year old version, adding two additional years of finishing in port casks, while maintaining the same bargain price. The result is a symphony of understated opulence.
The prolonged stage in wooden casks give the wine unique quality and characteristics. It is clear and auburn, with greenish spots and so concentrate that is has some viscosity.
The grapes are harvested in the coolest hours of the day and the wine is left to ferment in conical wooden vats at a controlled temperature. At the end of the process, it is refined for 15 months, first in new 600-litre demi-muids and then in barriques.
A blend 27 plants and spices which come from around the world are used in making this liquor. Angelica, hyssop, juniper, myrrh, saffron, aloe, arnica, cinnamon are among them, though the full list is a secret. It is distilled in copper stills and then aged in oak casks.
