Forever Young Rosé is an elegant wine that comes from Côtes de Provence, France. It has hints of citrus zest with a fresh flavor of clementines and is balanced. For the production process, the grapes are de-stemmed and then left for maceration. It is then put in a stainless steel container for fermentation at a controlled temperature, in which the whole process is very carefully checked and then matured in oak barrels. Golden in color, with a slight ivory hue. The nose opens on citrus aromas, especially lemon and grapefruit, then with airing develops hawthorn and jasmine notes as well as a touch of fresh apricot. From a fresh attack on Kaffir lime flavors with a hint of aniseed, the mid-palate expresses the elegance of the floral notes found on the nose, leading into a finish that lingers on hints of licorice.
Grape variety, 100% Sauvignon Blanc, organic (not certified), 8 months' ageing in bulk with some lees stirring, lightly fined & filtered before bottling. Located at the northern edge of the appellation De Tracy's vineyard is south-west facing, on flint and Kimmeridgian soils and extends from "Tracy hill" to the "Champs de Cris" plateau. 32 hectares are in production.
