The 2017 “IX Estate” beams from the glass with a feeling of purpose and a sense of place. In its youth, this vintage has continually shown enhanced soil driven aromas such as iron and graphite along with the sappy wild sage that grows in the periphery of this site.
The St. Huberts The Stag Paso Robles Cabernet Sauvignon shows a deep ruby, garnet, crimson color. Perfumed aromas on the nose offer inviting bramble berry notes of wild raspberry, dark cherry, and red currant, alongside baking spice notes of allspice, cedar, tobacco leaf and clove.
Notes from the Winemaker:As we have continued our exploration of the vast diversity that California has to offer, we find ourselves increasingly drawn to the cooler climates. These wines offer vibrancy, freshness and clean delineation that engage both our curiosity and our palate.
This Pinot Noir comes from the Petaluma Gap. The Gap is a smaller AVA within Sonoma County and is known for afternoon winds and cool temperatures through much of the growing season. The vines are often shrouded in fog which makes for a long, cool growing season and maximum flavors. Grapes are hand harvested. Lots are 100% destemmed to lessen tannins, and whole berries are transferred to tank.
This wine displays a vibrant, ruby plum color. The aromas are deep with Bing and Rainer cherries while backed with vanilla and slight caramelized raw sugar notes. The palate is intense with wild raspberry, blackberry and bramble. These flavors are backed by intense earthy notes from black pepper to mushroom followed by toasted oak and clove. The finish overall expresses ripe berry and leather with a silky envelope of toasted vanilla.
