Over the years, we have been fortunate to work with many great vineyards that span a diverse and varied view into a region that many would call the heartland of California Pinot Noir. Our goal is to create a wine that shows the essence of this iconic appellation.
Elysium is used to either accompany or replace dessert. It is wonderful with blue cheeses, with desserts containing red fruits (such as Summer Pudding, an English favorite), with vanilla, with dark chocolate, with ice cream desserts, and candlelight.
Plum core, crimson rim with a glossy sheen. There is an otherworldly aromatic element that is hard to define, a natural result of two hemispheres united by one winemaking philosophy. The Arabian spice souk leads the charge: dark, savory spice blends – harissa, baharat, cloves, nutmeg, pimento, cinnamon, fennel, anise.
Aromas of cassis, black cherry and dark plum mingle with subtle hints of vanilla, anise, tobacco and a touch of clove. The palate is full, rich, and bursting with dark fruit. Lush, well-balanced tannins carry the wine through to an incredibly long and silky finish.
Rich in texture with a lingering finish and versatile enough to complement just about any cuisine. Oak aging rounds out the palate and gives the wine its body. Deep rich berry compote flavors. Pinot from beginning to silky finish.
A classic Chardonnay, this 2021 vintage was blended from select Dutton Ranch vineyards in the prestigious Russian River Valley appellation. Barrel fermentation and sur lie aging have created a rich and smooth wine with subtle hints of oak and crisp flavors of Meyer lemon, honeydew melon and juicy white nectarine.
Bright lemon and apple aromas mingle with hints of toasty barrel complexity, and on the palate, pear and pineapple with spice and refreshing acidity will have you coming back for another glass.
Even at this early stage, this wine is long on flavor and texture, showing all the red raspberry and blackberry fruit that were apparent at harvest. Also coming forward are layers of dark chocolate, graphite, incense, and a wide array of baking spices.
