The 2012 is quite pale at the present time, with brilliant green highlights. The nose is well-defined and mineral. Still very young and quite elegant, this wine has yet to reveal its full complexity. However, its class already comes through in the mineral and floral aromas released when the wine is swirled in the glass.

The ancient cave, hidden in the heart of the picturesque Carmel mountain, was quarried into the mountain about 250 years ago. The natural conditions within the cave turned it into an ideal wine cellar, that was already used, as history reveals, in the 19th century to store brandy and wine.
Simmonet Febvre's Petit Chablis was born in vineyards located in the heart of the prestigious French region of Chablis, in Burgundy. It is produced with 100% Chardonnay grapes, carefully picked and selected by hand. Fermentation takes place in stainless steel tanks at a controlled temperature of 16-19 ° C. Subsequently the wine ages for 6-8 months on its lees, before being bottled.
Grapes taken from the best parcels, carefully selected; manual harvest in 15 kg boxes, with cooling of grapes and extraction of the must with a very soft whole grape pressing; fermentation in stainless steel vats and French oak barrels, followed by a rest period of 8 months. At the end of the 8 months rest, during the blend preparation, only a small part of the wine is used, after a second selection of the best barrels or vats which will then compose the final blend.
Intrigu is only aged in stainless steel for 6 months, followed by 3 months in bottle, which allows for a transparent presentation of the grape. On the nose there are aromas of balsamic, clove, violets, and black pepper. On the palate, the wine is filled with notes of darker black and red fruits, tobacco leaves and a touch of clove. The tannins are gentle and leave a mouth coating finish.
This wine gives aromas of ripe red fruit, blackberry pie, dried cranberries with hints of brown sugar and warm baking spices. Powdery tannins lend structure to this wine, while maintaining elegance and ending in a long lingering finish.
This bourbon barrel aged Zinfandel is vibrant and spicy, with flavors of licorice and cracked black pepper that are perfectly complemented by notes of vanilla and blackberry. [WE 2021 U.S. Winery of the Year]
