This Caberent is a dark ruby color in the glass. There is an array of aromas that includes cinnamon, dusty wood, blueberry, clove and a hint of dry pine. The smooth yet complex flavors encompass attractive black currants, cola, blackberries and dried herbs.
This resplendent wine nearly glows in the glass as aromas of stone fruit, wet granite, and sea water emerge. The mouthfeel is extraordinarily encompassing, leaving tingles of fresh lemon and ambrosia apple at the finish.
The 2020 vintage began with textbook conditions that continued through much of Harvest. The 2020 Knights Valley Cabernet Sauvignon has aromas of dark blue fruits and spices. Notes of cassis, sweet licorice and a juicy core of fruit are balanced by nice acidity and a silky, lingering finish.
A very fragrant Sauvignon Blanc that is chock full of spring blossoms, tropical flowers with a hint of citrus aromas too. The fresh, invigorating flavors show hints of pink grapefruit, guava, with more citrus and lots of limes.
Dark crimson in color, the strong, classic Zinfandel aromas of briar fruit and wild strawberries jump out of the glass and are complemented by hints of wet forest floor and high mountain forest.
Fruit is night harvested, when the temperatures are cool to minmise oxidation, making it easier to manage in the winery. After that, we tinker as little as possible, letting the vine and the flavor speak, gently guiding it through the course of the winemaking process.
