Made with 100% blue agave grown in the rich volcanic soil provided by Volcán de Tequila, sourced from two distinct regions of Jalisco, the Lowlands and the Highlands, each imparting a unique flavor profile in the finished product. Hand-trimmed agave plants, or piñas, are cooked via two distinct methods which allow us to control the flavor, for a superior Tequila.
With a dark garnet color, this medium-bodied Cabernet sports a fruit-forward profile with loads of black and red fruit and spices and herbs on the finish. It pairs well with a hearty stew or rib steak.
Produced from vines located on a specific geological vein where the gravelly soil is fine and sandy, the plot-by-plot selection unique to Aurore de Dauzac lets the Cabernet Sauvignon grapes express themselves, providing a crisp, fruity and intense wine.
This wine opens with rich aromas of blackberry jam, cassis and mocha with hints of sandalwood and vanilla. On the palate, concentrated flavors of cherry and spice combine with velvety tannins and subtle notes of leather over a lasting finish.
Ripe fig notes show signs of life against an almost unyielding nose of black licorice. On the palate the profile changes and the infused figs really get a chance to shine. Delightfully sweet with a lively finish enjoy with a festive after dinner toast or mixed in a cocktail.
Covenant’s Israeli winery started making Viognier from the Galilee in 2017 under the BLUE C label. It inspired us to see what a California Viognier could deliver using the same production methods. Covenant RED C Viognier comes from the same vineyard in Lodi, CA, that produces our Mensch Roussanne grapes. (Both Viognier and Roussanne are best known as French Rhone varietals.)
