Blackwater Wine The Underdog Chenin Blanc 2015

This 100% Chenin Blanc is harvested from selected old bushvine vineyards on the top slopes of Bottelary Hills. The fruit is destemmed and pressed, settled for 24 hours and fermented in stainless steel and concrete tanks, left on the fine lees for 6-8 months. A small bit of battonage was employed to give added texture but this wine was meant to be a compliment to that briny little oyster so not too much lees stirring.

Blackwater wines are focused on sourcing fruit from the best possible vineyards across the Western Cape, building long lasting relationships with the growers and do their utmost to make wines true to their origin. With the minimal intervention ethos in the cellar, it all comes down to the grapes, no wine making tricks - just sticking to the basics and attention to details. They personally enjoy wines built on natural acidity & grape tannin, not plastered under layers of oak with countless additions and manipulations forced upon it.
