Herzog Variations Oak is a special wine series that journeys beyond the variations of California wine country, and into the Battle of the Barrels. We start with North Coast Cabernet Sauvignon separated into two different types of oak barrels and see which one will come out on top. Oak barrels are a winemaker's spice rack, allowing them to vary the color, flavor, profile and texture of the wine.

The 2020 vintage began with textbook conditions that continued through much of Harvest. The 2020 Knights Valley Cabernet Sauvignon has aromas of dark blue fruits and spices. Notes of cassis, sweet licorice and a juicy core of fruit are balanced by nice acidity and a silky, lingering finish.

The Sangiacomo Family Roberts Road Vineyard is in the cool, fog-shrouded environs of the Petaluma Gap. They harvest fruit from this block by hand, then sort the berries. They remove about 50% of the stems, ferment in open top fermenters using native wild yeast. They punch down the cap manually several times daily. The wine is subsequently aged for one year in 60-gallon French oak barrels. Learn More

This wine has gentle earth notes along with an undertone of sour Montmorency cherries baked in a cardamom and sage pie crust. The fruit for this wine comes from four vineyards (Valenti, Fashauer, Perli, Estate) in Mendocino Ridge, and one in Anderson Valley (5% Wendling), all of which are planted at "mid-elevation" between 1200-1400 feet. 55% is from the Drew Estate vineyard. 20% whole cluster fermentation, aged in 10% new French oak. The 2014 Gravel Bed Red is dark purplish to ruby in color. Its nose is swarming with Cabernet spice, currant, black cherries,coconut wood aromatics and hints of black tea. The flavor is fruit forward with delicious blackberries followed by raspberry,underbrush tones, and dried leaves. Ramey Claret follows the Bordelaise model of blending different Bordeaux varietals. Malolactic fermentation is completed in barrel, and the blend is assembled early so it is "elevated" as the finished wine.
