This wine is made from 37% Vermentinu, 20% Rossala Bianca, 19% Biancu Gentile, 14% Genovese, and 10% Brustiano. We've had Vermentinu, or at least Vermentino, but not any of the other grapes. This is a dense and rich white. Floral and fleshy with a mineral-driven acidity and a viscous, oily texture. A heavy-weight that's perfect for winter and a finish that might last until spring. 30 - 50 years vine age. All wines are hand-harvested and sorted during harvest, maceration lasts 2 or 3 week. Fermentation takes place in cement tank. Wines are aged on average for 15 months in barrel. No new barrels - barrels are 1 or 2 years old. Wines are not filtered nor fined. Learn More

Barajuela is a type of albariza soil which is chalk-based and white and uniquely from the Jerez region. This is not a fortified sherry though and is rather a vintage Palomino Fino (aged with flor) and made in a fashion the preceded the Solera system of aging that dominates Sherry production today.
