Produced from vines located on a specific geological vein where the gravelly soil is fine and sandy, the plot-by-plot selection unique to Aurore de Dauzac lets the Cabernet Sauvignon grapes express themselves, providing a crisp, fruity and intense wine.
This is a lovely estate, one of the last remaining properties in the Mérignac gravel area, lying next door to Haut Brion and Pape-Clément. The name Caillou refers to pebbles, reflecting the fact that this was once riverbed, when the river Garonne overflowed millions of years ago. The characteristic elegance and finesse of this wine is attributed to its free-draining, gravelly soil and subsoil. Sadly the quantities of white produced are tiny as the wine is lovely.
Ripe black fruits and dark-chocolate flavors highlight this powerful wine. Fresh black-currant acidity backed by light notes of pepper. 83% Merlot, 17% Cabernet Franc.

Grand Cru “rich and structured” with a dark and glistening robe. Concentrated nose with fragrances of dark fruits, spices, undergrowth and distinguished oak notes. Mouth filling, with persistent tannins melted into the fruits. Harmonious finale, aromatic and intense.
Very expressive nose of morello cherry and brown tobacco, with sweet notes of licorice candy and peony. A complex palate, expressing violet and fresh blackcurrant, finishing with hints of thyme and a touch of bitter orange zest that gives the finish a gourmet taste. It is a sensual and charming, yet restrained Saint-Estephe. Silky, smooth tannins give this Pez 2018 a precise and refined length.
