    This little vineyard owned by Benoit Trocard since 2002 is located in Saint Christophe des Bardes. The grapes are not crushed and the prefermentation under 57 degrees F lasts 5 to 6 days. Then the fermentation process will last 2 to 3 days around 81 degrees F. The maceration of a week at 88 degrees F gives this wine an incredible finesse and concentration.
