Sonoma County Distilling 2nd Chance Wheat Whiskey
Promoting the lighter side of the darker spirits, our 2nd Chance Wheat Whiskey presents a typically forgotten grain as the pivotal player in this bright, smooth whiskey. A foundation of unmalted wheat is paired with malted rye that is then twice direct-fire distilled, implementing traditional 16th century techniques to create an experience reflective of our coastal heritage to achieve a gentle, welcoming profile for an easy to enjoy spirit.
Adhering to traditional methods, they’ve chosen to use directfire, copper pot stills for their distillation process. Their labor intensive production requires they distill twice to allow their rudimentary stills to reach a high enough alcohol concentration to go to barrel. In return, they are left with a beautifully viscous and high ester-driven spirit. At Sonoma County Distilling Company, they keep a watchful eye for burns as their direct-fire stills produce a consistent and slight caramelization. It’s through this imperfection that they find distinction. Using a mindful approach, combined with their coastal climate and refined barrel program, they craft their distinctive style; confirming their commitment to producing world-class whiskeys.
