100% Assyrtiko. Santo Wines, founded in 1947, is the cooperative on the island of Santorini. It is a vital aspect of continuing Santorini's winemaking tradition as it supports many of the island's farmers who depend on Santo Wines' yearly production. The winery was built on 5 different levels in order to blend in with Santorini's breathtaking landscape, so it was constructed in an eco-friendly manner. This 5-tiered structure allows the juice extracted from the pressing process to be transferred into tanks through gravity and the minimal use of pumps, which promotes a higher quality winemaking process. The assyrtiko grape expresses its best character in Santorini's volcanic terroir.
