Sparkling wine of the typical pale-yellow, crystalline color with a fine,creamy, and persistent foam. Fruity notes, even in the bouquet, enhanced by hints of apple, acacia, citrus, and almond. Drink as an aperitif or pair with fish, mollusks, and crustacean appetizers. Well matched to spring cuisine based on wild herbs, such as risottos and quiches. It can also accompany moderately sweet pastries.
