A singular Chablis from a small plateau parcel on the left bank of the Serein, across from Fourchaume, planted in 1974 with east-west rows that protect the grapes from direct sun. Fermented and aged in tank to preserve purity, this cuvée is Patrick Piuze's fresh, terroir-driven expression of old-vine Chardonnay from clay-rich soils.
Concentrated yet precise, it offers racy notes of iodine, tangerine zest and oyster shell with a saline, mineral core. Crisp, elegant and mouthwatering - perfect with oysters, steamed clams, or fresh goat cheese.
