Marcel Servin Chablis 2015
The color is yellow with green reflections. The nose is elegant, generous, and very feminine. One finds delicate floral and white fruit aromas. The palate has excellent balance with white fruits again dominating (pear). There is an excellent freshness and a round, long finish. Excellent wine for an aperitif or a fish plate with sauce. It is also great when served with snails, oysters, seafood (crayfish), andouillette, or poultry.
The grapes are from the Pargues vineyard, formerly classified Premier Cru, but not being worked when reclassification was done following WWII. Stainless steel fermented, with 100% malolactic completed. It’s basically Premier Cru quality at a village-level price. Since this is Francois’ personal, entry-level wine, we nickname it “Special Reserve”.
