100% Sauvignon Blanc. Intense, laser-focused aromas and flavors of citrus fruits, white peaches, flowers, and minerals with a rich texture. The finish is long, fresh, and pure. Delicious by itself as an aperitif or excellent served with most hors d'oeuvres and appetizers, seafood, fish, or certain cheeses like goat cheese in particular.

The Jean Pabiot family estate dates back to the late 19th century, which means the Pabiot family have been winegrowers in the Loire appellation of Pouilly-Fume for over 100 years and 5 generations. Today the domain is run by Alain and his son Jerome Pabiot, who represent the 4th and 5th generations respectively. The domain's name, des Fines Caillottes, means the "small stones" which cover the vineyards over a limestone and clay soil. These vineyards consist of 30 plots that are, a total of 70 acres, located in different villages including Pouilly-sur-Loire (Pouilly, Tracy-sur-Loire, Saint-Andelain, and Saint-Laurent-l'Abbaye et Villiers).
