“Gryphe” shows dark, dried blueberry fruit in the nose, with licorice, cocoa and berries in the mouth. It’s an elegant wine, and as far as we’re concerned, a whole new take on Carignan. Marinate a flank steak, sit outside while your grill warms up, and pour yourself a glass of Gryphe.
100% Carignan. The vines are planted on limestone and clay terraces, surrounded by forest, in Saint-Marcel d'Ardeche. Domaine des Accoles works them with the utmost respect for the soil and surrounding biodiversity. The grapes are hand harvested and vinified with their indigenous yeatsts. They aim to produce wines that are fruit forward, pleasurable, and elegant.
