Girotondo Chardonnay 2014

Very expressive apple and Bosc pears. Lots of white flowers and pretty aromatics in the nose. Amazing texture and rich complexity. Just creamy in the finish with bright, fresh and food friendly acidity.
Harvested by hand and into crates in the last week of August, the grapes were de-stemmed and crushed with dry ice (the dry ice will help to repel oxygen and this helps to preserve the brighter aromatic characters) pressed into steel fermenters with temperature control. The juice fermented for 4 days at a very low temperature, was filtered and left in tank to rest for 2 months. Then bottled.
