From mostly younger vines, this cuvee is combination of vineyard selection (age of vines) and cellar selection (style of wine). Thierry Sabon aims with this cuvee to highlight ripe, forward fruit.
Various sources report that in 1547 an act passed in front of a notary dealt with a parcel of vines of an eminent "ad montem oliveti" but it was not until the beginning of the twentieth century that the history of the Sabon family and Of this place will be linked. Seraphin Sabon, native of the neighboring village of Serignan du Comtat married Marie, daughter of Romain Jausset, owner in Chateauneuf-du-Pape. In 1932 he created the "Clos du Mont-Olivet".
