Taking its name from its location in Shiraiwa, this region is renowned for its pristine snowmelt water. Originally from northern Italy, this is the emblematic grape of our region due to its slow maturation with cool nights giving its full varietal expression. Dry but intensely aromatic.
On the nose, the wine leaps from the glass with ripe blackberry, cassis, black cherry, and red plum, with a lovely herbaceous undertone. The palate expresses juicy red and black fruits with hints of black tea, damp earth, vanilla bean, lavender, and just a touch of flint.
This north-facing limestone site is cool and late ripening. In a warm year like 2019 its quality soars. There is such a fine acidity and outstanding length. To create this unparalleled expression, we worked with our friend and Jim Beam Master Distiller, Fred Noe, aging our tequila in the legendary Booker’s 30th anniversary barrels for over three years. The result is a complex spirit layered with sweetness, oak, and cooked agave. It’s a tequila deserving of the legacies that brought it to life.
A very fresh and decidedly peppery nose features pretty notes of red berries and an elegant floral nuance. There is fine intensity and volume to the well-detailed middle weight flavors that deliver very good length on the saline-inflected finish. Good stuff that could be enjoyed young or aged for a few years to good effect.
