The Salem Wine Company was started by star-sommelier, Rajat Paar, and his partner and esteemed winemaker, Sashi Moorman. Fruit comes from the biodynamically-farmed Seven Springs Vineyard in the Eola-Amity Hills subregion of Willamette Valley, OR and is fermented with native yeasts (nothing added), fermented in large, neutral oak and is naturally clarified without filtration. This hands-off method produces a unique, complex style of Chardonnay with ripe stone fruit, bright acidity and a backbone of minerality.
85% stainless steel fermentation on French oak, 15% barrel fermentation; 6 months aging in mostly French oak. Rich, medium-bodied wine, hints of oak, lush tropical fruit flavors.
Anderson Valley, CA - Intense floral aromas of rose petal, gardenia and honeysuckle couple with the subtle perfumed spice notes of ginger and green tea. In the mouth the wine confirms its floral and spice character and shows zesty citrus and concentrated lychee-nut.
Fitz-Ritter Gewurztraminer Spätlese is a sumptuous and aromatic wine from Germany, offering a rich bouquet of lychee, rose petals, and exotic spices. Intense and bright yellow colored wine with gold edges. On the nose, offers a delicate bouquet, displaying notes of roses and orange blossoms. Vanilla aromas provided by its contact with oak are also perceived. On the mouth, there’s an intense and balanced acidity. Good freshness with very pleasant citric notes.
A well-balanced, light-bodied Moscato with beautiful scents of white peaches, rose, and lychee and a lingering finish of sweet and creamy peach and honeydew melon flavors.
Covenant’s Israeli winery started making Viognier from the Galilee in 2017 under the BLUE C label. It inspired us to see what a California Viognier could deliver using the same production methods. Covenant RED C Viognier comes from the same vineyard in Lodi, CA, that produces our Mensch Roussanne grapes. (Both Viognier and Roussanne are best known as French Rhone varietals.)
