Legend says that she led as many as 1,000 soldiers on the battlefield, being a top military leader in the 13th century. Her weapon of choice was a long curved blade called a naginata, and a short dagger called a kaiken.
Medium-gold in color. Aromas of key lime, peach, and lemon pith. Medium-full bodied on the palate, with a refreshing acidic grip. Aged in barrel for 12 months before being racked to concrete and stainless steel for an additional 8 months of aging before bottling.

The Agaves used to make 400 CONEJOS can take between 8 & 15 years to reach optimum maturity. The Pinas are slow cooked for 3-5 days, milled by stone, then kept in a wood tub as they begin the fermentation process.
Produced from 100% Chardonnay grapes. Hand picked Chardonnay grapes grown in the Galilee exhibit nuances of jasmine and honey. Body is medium to full. The wine has been aged for 8 months in oak barrels which adds complexity and richness.
