Dignitary Cabernet Sauvignon is crafted from grapes grown at the base of Chalk Hill, where a slightly warmer climate and rich volcanic soils create ideal conditions for the clone. The wine is aged unfiltered for 18 months in French oak barrels. On the palate, luscious aromas of dark fruit leading to elegant layers of blackberry, black cherry and hints of spice and warm saddle leather on the nose, with a lasting and well balanced finish.
The vines for Dignitary Pinot Noir are heavily influenced by the Petaluma Gap which is a wind gap named after a coastal mountain opening that stretches east from the Pacific. This, combined with maritime breezes, keep day-time temperatures low, creating the perfect environment for growing Pinot Noir. The wine is aged unfiltered for 10 months in 100% French oak barrels. The result is an elegant expression of red and black fruit with subtle hints of spice.
At first sip, this Chardonnay is fruit-forward and refreshing. Crisp green apple, Asian pear and lemon meringue pie take center stage in our classic, cool-climate Chardonnay. More subtle tones of stone fruit, honeysuckle and yellow plum develop in the mid-palate while barrel fermentation and sur lie aging finish this Chardonnay with rich flavors of vanilla bean, butter cream and subtle hints of baking spices and clove. Well balanced acidity gives this lively wine structure and the perfect amount of bite.
There’s lots of Chenin between here and Santa Barbara, but there is good reason to traverse all those miles. Of all the sites with which the winery works, Jurassic Park, planted on its own roots on quartz sand atop lime- stone in the late 1970s exhibits the most vintage variation, and small variations create very strong signals in the wine. Some years lean toward the lithe and appley; some towards the exotic; some toward the saline and chalky.
