This wine is phenomenally dark in color, and while it is rich in tannin and extract, the texture is silky, polished and long. In its youth, the wine is showing notes of mocha, cassis, black cherry, clay, and smoke.
The nose is zippy with citrus aromas of lemon and tangerine, stone fruits and toasted oak. The medium-weight palate is marked by refined minerality and oak supporting a ripe palate of pear, lemon cream and fresh apple flavors.
Grenache (Garnacha) "Gambrels of the Sky" comes from an Emily Dickinson poem entitled “I dwell in Possibility,” and though this feels a little lofty, it seemed appropriate for a wine dedicated to my remarkable grandmother, Frances Howard Peterson. The 2013 Cabernet Sauvignon opens, inky and brooding in the glass, with rich dark fruits and crème de cassis followed by whispers of crushed violets and baking spices. Devastatingly handsome blackberry and boysenberry flavors are complemented by dustings of mocha.
Our 2021 Mark West Cabernet Sauvignon brims with layers of blueberry and blackberry preserves with hints of spice. Underlying note of toasted vanilla and caramel give the wine an elegance. The finish is rich and smooth with a lingering touch of dark plum.
This Merlot, created in a Bordeaux-style blend, offers aromas of black cherries, fresh plums, with overwhelming violet and dark chocolate the bouquet. On the palate, the wine is layered with fresh bing cherries, rich baked plums, and mocha flavors, accented by savory spices and toasted oak.
The 2021 Bella Union presents a luscious nose of ripe black cherry, plum, strawberry, opulent berry compote and cassis. The entry is rich and inviting with succulent flavors reminiscent of cherry pie.
Fossil & Fawn started out as a completely reasonable idea in the late summer of 2011, and quickly spiraled into a much more complex, frustrating, terrifying, and unbelievably rewarding venture.
