Penfolds Bin 707 is widely regarded as 'benchmark' Australian Cabernet Sauvignon. A full-bodied wine with outstanding depth, complexity and structure, the palate offers great intensity and concentration of varietal flavor, balanced by a finely integrated oak character from 16 months maturation in new small American oak barrels.
Mosaic is Shiloh's flagship. The wine has an opaque and dark-purple color. It has intense fruit aromas, along with black raspberry, roasted coffee beans, and a cacao bouquet.
Marom Shamai 2018 is a dry red wine, made of 100% Cabernet Sauvignon. It has a powerful Bordeaux-Red color, an aroma of very ripe, shriveled black fruit, cherry, blueberry, plum and raspberry, with a background of long aging in fine oak barrels, a concentrated, oily, complex taste and a smooth, long, impressive finish.

Rich aromas of seasoned oak meld effortlessly with ripe boysenberry and candied cassis. The entry of the wine if soft and delicate, but quickly evolves into a serious mid-palate replete with opulent and concentrated flavors of dark fruits.
Perret’s approach to winegrowing is classic: respect each individual terroir—he produces several single-vineyard wines—and work the soil to avoid the need for chemical treatments. His goal is to make fresh, structured wines, in “a sort of Burgundian style” as he says, but without too much wood; wines that aren’t too worked over and will age well.
