Fossil & Fawn started out as a completely reasonable idea in the late summer of 2011, and quickly spiraled into a much more complex, frustrating, terrifying, and unbelievably rewarding venture.
Earth and fruit are both complexly expressed in this nearly-opaque, massive-yet-controlled Pinot from the always impressive Pisoni Vineyard. A melange of dried red flower and black fruits explode on the nose, and the palate bristles with textural notes of potpourri, dark cherry, and watermelon seed.
Dark garnet-ruby color. A mix of small red fruits - raspberries,currants, cherries, rhubarb and pomegranate - with toffee andcola nut, beginning to show secondary characteristics.
This great wine is the result of demanding vinification and aging processes, as well as the quality of our Syrah and Grenache parcels located at the foot of the famous Mont Ventoux.

The 2010 vintage has delivered a beautifully fragrant wine with layered aromas of blackberry, cassis, cinnamon cake, anise, cardamom, tobacco leaf, and mocha. On the palate, the entry is soft and smooth with blueberry and bittersweet chocolate flavors, as well as notes of red currant, cedar, and sweet spice.
Psagot Winery was established in the summer of 2003. The winery's cellar is a cave which keeps an optimal constant temperature with high humidity, making it an ideal environment for the aging of wine.
The Lindstrom Cabernet Sauvignon, grown on one of the warmer sites in Stags Leap District, shows off the cooler season to its full advantage, while still retaining the ripe cherry and cocoa powder characteristics so indicative of this growing area.
