A unique blend of Upper Galilee- Mount Meron- vineyards. Grapes were manually and selectively harvested at dawn, from carefully selected plots on the northern slopes of the mountain, which enjoy an ideal climate for growing high-quality, noble grape varieties.
This Sauvignon Blanc, made from 100% Sauvignon Blanc grapes, encapsulates the essence of this noble grape variety. As you uncork a bottle, the aromatic symphony begins. Kaffir lime and sea spray burst from the glass, inviting you on a sensory journey.
The number of sunny days, combined with wide daily-temperature variations and daily breezes blowing in opposite directions at sunrise and sunset—plus wonderful, sunny exposure of the hillside vineyards—result in Pinot Grigio grapes that have a unique balance of bouquet, flavors, crispness, sugars, and acids.
With an intense ruby-red color, the wine has profound aromas of red and black fruits. On the palate, the wine's dense structure is balanced and elegant, with a silky presence, relatively low alcohol, and noble tannins.
A unique combination of Upper Galilee terroir, with select vineyards rich with history that can be traced back for centuries. Meticulous, selective harvesting, sorting, and fermentation process, of four noble grape varietals. followed by aging in high-quality French oak barrels and further aging in the bottle, retained the original fruit flavors.
A unique blend of 3 noble white grape varietals – Chardonnay, Sauvignon Blanc and Sémillon – from Upper Galilee vineyards at 700m elevation, producing very high quality grapes. On arrival at the winery, whole clusters were gently pressed.
This is extremely ripe and indeed reminds me more of cabernet than pinot with good detail and obvious minerality to the sweet, powerful and sappy flavors that offer real size and weight.
The grapes are harvested in the coolest hours of the day and the wine is left to ferment in conical wooden vats at a controlled temperature. At the end of the process, it is refined for 15 months, first in new 600-litre demi-muids and then in barriques.
