The Cave "Old Vines" represents the Cave winery's masterpiece. This fine wine was made from quality Cabernet Sauvignon grapes grown on mature vines that were planted in the early 1980's in Kerem Ben Zimra in the upper Galilee region of Israel. This wine is produced from exquisitely balanced grapes grown in Segal's Dishon Vineyard. The vineyard, in the Kadesh Valley in the northern Galilee, is planted on well-drained, dark soil at a height of 430 meters above sea level. Select blocks of the vineyard are densely planted, and strict vineyard management limits the yield, thus intensifying the grapes' natural sugar, acid, and color. Rich tannins enhance the fruit's quality.
