At first sip, this Chardonnay is fruit-forward and refreshing. Crisp green apple, Asian pear and lemon meringue pie take center stage in our classic, cool-climate Chardonnay. The Salem Wine Company was started by star-sommelier, Rajat Paar, and his partner and esteemed winemaker, Sashi Moorman. Fruit comes from the biodynamically-farmed Seven Springs Vineyard in the Eola-Amity Hills subregion of Willamette Valley, OR and is fermented with native yeasts (nothing added), fermented in large, neutral oak and is naturally clarified without filtration. This hands-off method produces a unique, complex style of Chardonnay with ripe stone fruit, bright acidity and a backbone of minerality.
