Fossil & Fawn started out as a completely reasonable idea in the late summer of 2011, and quickly spiraled into a much more complex, frustrating, terrifying, and unbelievably rewarding venture. They began with the notion of making a small amount of wine from their family vineyard as a single-site bottling, simply because no one else had done so before.

Ours is not a buttery, oaky Chard. It sees no malolactic fermentation and no oak so you get a dry and bright palate that is fruit forward and built for food. The nose is fresh and bright with orchard fruit aromas and a touch of smoke and flint. Lush notes of ripe pear and apple blend with mouthwatering acidity to give backbone and verve.

Simonnet-Febvre Chablis is a crisp and mineral-driven French white. It greets with alluring aromas of green apple, citrus, and a touch of flinty notes. The palate delivers flavors of lemon zest, white peach, and a vibrant acidity, leading to a wine of purity and elegance, perfect for pairing with seafood or light poultry dishes.

Lovely pear, red apple, stone fruit, lemon zest, along with hints of spice and floral notes. The palate has really good concentration, but remains vibrant and juicy with great balance and tension.

Fourth-generation vigneron Bruno Colin is privileged to work some of the most prestigious sites in his home village of Chassagne-Montrachet. The house style could be described as a classical expression of these great climats, offering loads of Burgundian terroir with lovely texture, class, and precision.

Puligny Montrachet Premier Cru "La Truffière" from Domaine Colin is produced in small quantities and has a beautiful upright character and a sublime mineral balance. The premier cru vineyards of La Truffière lie at the top of the hill looking out over the village of Puligny. The Chardonnay grape here gives a nice straw yellow wine, clear and with green touches. The aroma of fresh tropical fruits with notes of vanilla pours out of the glass. The wine is creamy and soft with a flattering fruity sweetness in the long aftertaste.

Named in honour of faithful hounds everywhere, Bar Dog offers a well-balanced, refreshing chardonnay. Its aromas and flavours of lifted ripe pineapple fruit, followed by notes of nuts, honey and citrus lead to a fresh finish. Pair with roast chicken, grilled pork chops or vegetarian fare and enjoy with Spot at your side.

This Chardonnay opens with notes of fresh ripe pear and caramel apple surrounded by notes of vanilla cream and toasted marshmallow. A core of acidity keeps the wine fresh on the palate to help balance its rich and buttery midpalate.
