Pale pink in color, fine fruity and slightly spicy in scent with nuances of small red fruit. The taste is round, full and fresh and ends aromatic with a mild and persistent finish.
The name Colline aux Fossiles may seem fanciful, but there are actually old, weathered fossils mixed in this site’s gravelly soils. The Colline Aux Fossiles Chardonnay is picked when the flavors are rich and ripe but when there is still plenty of natural acidity remaining in the grapes.
Rounded and supple, full of dark raspberry and plum fruit, and lifted with floral notes make this a great value supper wine. It comes from a grand estate close to Carcassonne where the Château was built by the same architect as Versailles and where King Louis XIII left his travelling bed, possibly in the hope of a return visit.
