Sake

Inspired by the ancient recipe of Hiroemon Takeda, the renowned Samurai and Japanese Sake connoisseur, Hiro is crafted by our own Toji (Master Brewer) using only specially polished rice from the Murakami plain in the Niigata Region.

Using only selected rice and Nada's famed spring water from Mt. Rokko, UKIYO-E JUNMAI DAIGINJO SAKE has been brewed with meticulous care and a centuries old tradition. A character istic fullness produced by the fruity fra grance and the umami of the rice can be enjoyed chilled or at room temperature.

This sake is classified as a Tokubetsu Junmai-shu, meaning it is 'special' as the rice is milled to 60%, which is 10% more than a traditional Junmai-shu. Slowly fermented at low temperatures in small batches, Haiku Premium Select is crisp and refreshing.

Premium Junmai Sake is produced with the highest grade California rice, polished to 60 percent and fermented slowly at a low temperature. The rich, mellow flavor of Premium Junmai Sake, with its delightful aroma, is enjoyable either warm or chilled.

Hiro Junmai Sake is a super-premium Japanese sake crafted from highly polished rice, with a milling rate of 60% for the Hiro Red Junmai. This delicate sake offers a smooth, clean flavor profile with subtle floral and fruity notes.

This beautiful and exceptionally full-bodied sake is brewed with a proprietary new strain of rice, Hakutsuru nishiki, which yields a sake unlike any other. Lovely floral aromas and a mouth-filling richness showcase its superior attributes.

Akashi-Tai Honjozo Tokubetsu Sake is a premium Japanese sake crafted with traditional brewing techniques for a smooth and balanced flavor. This Honjozo Tokubetsu offers delicate aromas of rice and a subtle hint of fruit, with a clean and crisp finish.

Made using the highly sought Yamadanishiki rice - milled until only 38% of the grain remains - grown in a district of Hyogo. Gorgeous melon, citrus, and sage aromatics fill the room. Bitter orange, minerality, and fresh cut grass are abundant on the long lasting finish.

Excellent Sake rice (Yamadanishiki), a high polishing rate (50%) and a long fermentation at low temperatures turn Île Four Limited Edition into a super premium Sake comparable to single cask bottling of high-end Whiskies or rare wines.

Fruity flavor with elegant aroma has deep and dense taste but texture is filled with transparency. It changes the taste in your mouth from light into substantial sweet, and you can enjoy its long aftertaste.

Gikyo Junmai Ginjo Genshu is crafted with 100% Yamada Nishiki rice, polished to 60%, and produced in Higashi-Harima, Hyogo Prefecture. With an alcohol content of 16% to 17%, this sake is made using domestic rice and rice malt.
