Provenza Sebastian Brut Rosato
Lively rose color with light auburn reflections. Pink grapefruit and pomegranate oxidating together emerge as peach blossom and mineral camphors. Excellent as an aperitif, perfect with risotto, fish, white meats, and soft cheeses.
Bottled by Azienda Agricola Provenza, owned by Azienda Agricola Ca Maiol. In the harvest a cryomaceration is carried out on the grapes, which means a maceration at a temperature of 39–41 degrees F, for around 24 hours. White vinification follows, with fermentation at 55–57 degrees F for about a month. It is then left on its lees to be refermented in the autoclave for about 2 months. This permits the formation of a widely perfumed bouquet and a rounded and well-structured wine.
