Pied a Terre Cabernet Sauvignon 2012
As usual, the use of new wood was kept to a minimum in 2012. While all the wine was aged in wood, only 10-15 percent of the wood was new. Additionally, we fined with organic egg whites to soften the tannins. Medium to full bodied; sour cherry; great texture, subtle tannins. Drink it alone or pair it with rich meat dishes.
The 2012 growing season provided ideal conditions for grape growing. The vintage was bountiful and provided beautiful ripe red fruits and excellent phenolic concentration. Our fruit came from some of the best vineyards in Sonoma: Grable (Knights Valley), Mauritson (Alexander Valley), Chamizal (Sonoma Valley), Rockpile (Rockpile AVA), Aunt Cathy (Dry Creek Valley), Wild Iris (Chalk Hill), and Clajeaux Vineyard (Sonoma Valley).
