Viognier plays an important role, infusing the bouquet with luscious perfumes and adding complex sweet fruit flavors to the palate. Viognier holds a phenolic or tannic character that enables increased stabilisation of color in the wine, hence the bottomless pit blackness of color, plus the savory tannins which enable such an elegant flourish. The red wine of choice to accompany game fowl or duck, roasted spring lamb or spiced venison bangers.
