Light pink in color. Yellow fruits aromas and a great freshness on the nose. Supple and soft on the palate with peach aromas. Great acidity. Finishes long and elegantly. Goes well with seafood, raw and lightly cooked shellfish and grilled fish and goats' cheeses.
The cooperative of Saint-Maximim was founded by 200 wine growers 100 years ago. In 1997, they merged with the other cooperative of Tourves. They became by then the Cellier de Saint Beaume. Gravity wine making and gentle pressing (pneumatic press); indigenous fermentation at low temperature, after 10°C clearing. Clarifying by natural sedimentation.
