100% Greco from 10 year old vines, grown on clay and limestone soil. Fermented in stainless steel for 20 days at a controlled and constant temperature of 55.5F. The wine does not go through malolactic fermentation.
Intense straw yellow color, fragrance characterized by fruity and strong intensity and persistence. Sensations of acidity and flavor increase gradually giving a balanced and pleasant taste. It goes well with hors d'oeuvres, especially fish dishes, cold dishes, fried fish, oysters, lobsters and shellfish, excellent with buffalo mozzarella, surprising with eggplant parmigiana.
